- We use 2g of ceremonial matcha per cup. That's the standard dose for colour, flavour, and a smooth finish without bitterness. Want more? There's an extra strong option for a bit more.
- It's prepared cold first — the powder is whisked with water before the milk goes in. That step makes a real difference in texture and flavour. A lot of places skip it.

Why matcha is everywhere but good matcha is rare
Matcha became popular in Spain around 2022, mainly spreading from Barcelona. The problem is that many places added "matcha latte" to their menus without switching suppliers. Ceremonial-grade powder costs more than food-grade — and the difference shows up in the cup, even if it's hard to put into words.
In S'Agaró and the Costa Brava more broadly, adoption came later than in the city. The places working with matcha from traceable origins are the same ones working with specialty coffee. It's the same mindset applied to different ingredients.
